Part Two and the Make Up Exam

Part Two

I'm sorry to say that the Carrot and Red Pepper Soup did not come to fruition yesterday, nor did the Hearty Chili Mac.  This is what happens when I drink.  All good intentions fly out of the window.  And this on one glass of Cabernet Sauvignon.  (sigh)  I admit it; I'm a lightweight. 

I stayed at my neighbor's, enjoying the company of several new people I met and hers, and by the time I got home, I was not in the cooking mood.  Hey, it was almost 8PM.  Remember, I'm an official snowbird now.  We eat dinner at 4PM.

I did stay vegan yesterday, though (except for -- slap my hand -- two pieces of this yummy had-to-try creamy cheddar cheese my new acquaintances brought down from Canada).  I made a salad with romaine, crumbled up black bean burger, corn, tomatoes, peppers and salsa for lunch.

So to make up for my dreadful lack of commitment to the cooking, I whipped out the cookbooks this morning and chopped up a mini-storm.  I made Zucchini Scramble with half of my tofu and the Asian Marinade for the other half, which is happily soaking as I write.  See below for the photos and reviews (yes, all of my photos are always enlarged by clicking, but not sure you will want to today)


Zucchini Scramble:  Zucchini (natch), onion, garlic, tofu, chili powder, sauteed in water.  Add soy sauce at the end.


Plated:  They said to use French bread or an English muffin, but all I had on hand was Sourdough, so that's what it's on.  It was optional to add salsa, so I glopped on some Trader Joe's Southwestern.

Review:  Eh.
But I have a skilletful left over, so I guess I'll be eating it for a few more days.


Lemon Ginger Tea
I wouldn't recommend drinking it with the Zucchini Scramble.  Salsa, soy, lemon and ginger just don't go well together.  Even drinking it afterwards wasn't the best.


It even comes with a fortune attached to the tea bag.  Sorry my camera is focus-challenged, but here is what it says:  You will never find happiness if you do not conquer your own doubt.
Well, I doubt that I will ever cook the Zucchini Scramble again and that makes me happy.  So take that!


And my tofu is still marinating............
