The Living Room

Since I have nothing much today to blog about, dear reader, you will be treated to an incredibly captivating post about ..................the living room. 

(I did make it to some of the Monday activities, though not all, as planned.  Had to go find March by Geraldine Brooks for the book discussion group.  Lucky for me, I found an out-of-print hard copy for only $6 rather than shelling out $15 for the paperback!)

The latter part of the day was spent in ........................ the living room.  Emailing, buying plane tickets home for a quick 3 day trip (not that I want to go home, but I have some appointments I need to keep), trying out my new DVD, Pilates for the Injured (or something like that...for the "inflexible"...although I've always been very flexible...but the description said it was good for those who've had injuries, so I'm thinking herniated discs and whiplash count...)  In any event, I am not a pretty picture doing it.  I also spent time counting up my saturated fat, total fat, protein, fiber, cholesterol and sodium from today's culinary selections.  Yawn.

However, the sun is now setting just outside the window of (you guessed it)...........................the living room.  So although not a spectacular one tonight, it did feel heavenly to sit in the sunlight for the last hour of the day at my usual "laptop station."  (Now as I write this, the old man with the two fluffy white pooches is out there on the golf course letting them poop....at least he scoops it up....I think...hmmmm, maybe I'd better watch....he's out there in his red bathrobe every morning, too.)

Dairy, Dairy, Quite Contrary

Medicine/diet/nutrition are in flux as we learn more.  We don't have all the answers to all the questions.  That said, you might want to read this just FYI and to weigh. 

(For my part, I've drunk very little cow's milk in the last 20 years and as said in previous posts, have now cut down my cheese consumption to such low levels, that last night after a Starbuck's skim milk hot chocolate, I experienced in spades some of the side effects of lactose-intolerant people.  I'll spare you the details, especially since you can read them below.)


Health Concerns about Dairy Products

Many Americans, including some vegetarians, still consume substantial amounts of dairy products—and government policies still promote them—despite scientific evidence that questions their health benefits and indicates their potential health risks.

Osteoporosis
Milk’s main selling point is calcium, and milk-drinking is touted for building strong bones in children and preventing osteoporosis in older persons. However, clinical research shows that dairy products have little or no benefit for bones. A 2005 review published in Pediatrics showed that milk consumption does not improve bone integrity in children.1 Similarly, the Harvard Nurses’ Health Study,2which followed more than 72,000 women for 18 years, showed no protective effect of increased milk consumption on fracture risk. While calcium is important for bone health, studies show that increasing consumption beyond approximately 600 mg per day—amounts that are easily achieved without dairy products or calcium supplements—does not improve bone integrity.2

In studies of children and adults, exercise has been found to have a major effect on bone density.3-5

You can decrease your risk of osteoporosis by reducing sodium and animal protein intake in the diet,6-9 increasing intake of fruits and vegetables,9,10 exercising,4,11 and ensuring adequate calcium intake from plant foods such as kale, broccoli, and other leafy green vegetables and beans. You can also use calcium-fortified products such as breakfast cereals and juices, although these products provide more concentrated calcium than is necessary.


Fat Content and Cardiovascular Disease
Dairy products—including cheese, ice cream, milk, butter, and yogurt—contribute significant amounts of cholesterol and saturated fat to the diet.12 Diets high in fat and saturated fat can increase the risk of heart disease, among other serious health problems. A low-fat vegetarian diet that eliminates dairy products, in combination with exercise, smoking cessation, and stress management, can not only prevent heart disease, but may also reverse it.13,14 Non-fat dairy products are available; however, they pose other health risks as noted below.


Cancer
Prostate and breast cancers have been linked to consumption of dairy products, presumably related to increases in a compound called insulin-like growth factor (IGF-I).15 IGF-I is found in cow’s milk and has been shown to occur in increased levels in the blood of individuals consuming dairy products on a regular basis.16 Other nutrients that increase IGF-I are also found in cow’s milk.

Case-control studies in diverse populations have shown a strong and consistent association between serum IGF-I concentrations and prostate cancer risk.17 One study showed that men who had the highest levels of IGF-I had more than four times the risk of prostate cancer compared with those who had the lowest levels.18 Other findings show that prostate cancer risk was elevated with increased consumption of low-fat milk, suggesting that too much dairy calcium could be a potential threat to prostate health.19,20

Ovarian cancer may also be related to the consumption of dairy products. The milk sugar lactose is broken down in the body into another sugar, galactose. Research suggests that the dairy sugar galactose might be toxic to ovarian cells.21 In a study conducted in Sweden, consumption of lactose and dairy products was positively linked to ovarian cancer.22 A similar study, the Iowa Women’s Health Study, found that women who consumed more than one glass of milk per day had a 73 percent greater chance of ovarian cancer than women who drank less than one glass per day.23


Lactose Intolerance
Lactose intolerance is common among many populations, affecting approximately 95 percent of Asian Americans, 74 percent of Native Americans, 70 percent of African Americans, 53 percent of Mexican Americans, and 15 percent of Caucasians.24 Symptoms, which include gastrointestinal distress, diarrhea, and flatulence, occur because these individuals do not have the enzyme lactase that digests the milk sugar lactose. For those who can digest lactose, its breakdown products are two simple sugars: glucose and galactose. Nursing children have active enzymes that break down galactose. As we age, many of us lose much of this capacity.25 Additionally, along with unwanted symptoms, milk-drinkers also put themselves at risk for development of other chronic diseases and ailments.


Vitamin D
Individuals often drink milk in order to obtain vitamin D in their diet, unaware that they can receive vitamin D through other sources. The natural source of vitamin D is sunlight. Five to fifteen minutes of sun exposure to the arms and legs or the hands, face, and arms can be enough to meet the body’s requirements for vitamin D, depending on the individual’s skin tone.26 Darker skin requires longer exposure to the sun in order to obtain adequate levels of vitamin D. In colder climates during the winter months the sun may not be able to provide adequate vitamin D. During this time the diet must be able to provide vitamin D. Fortified cereals, grains, bread, orange juice, and soy- or rice milk are healthful foods that provide vitamin D. All common multiple vitamins also provide vitamin D.


Contaminants
Milk contains contaminants that range from pesticides to drugs. Milk naturally contains hormones and growth factors produced within a cow’s body. In addition, synthetic hormones such as recombinant bovine growth hormone (rBGH) are commonly used in dairy cows to increase the production of milk.27 Because treated cows are producing quantities of milk nature never intended, the end result can be mastitis, or inflammation of the mammary glands. Treatment of this condition requires the use of antibiotics, and antibiotic traces have occasionally been found in samples of milk and other dairy products. Pesticides, polychlorinated biphenyls (PCBs), and dioxins are other examples of contaminants found in milk. These toxins do not readily leave the body and can eventually build to harmful levels that may affect the immune and reproductive systems. The central nervous system can also be affected. Moreover, PCBs and dioxins have also been linked to cancer.28


Milk Proteins and Diabetes
Insulin-dependent (type 1 or childhood-onset) diabetes is linked to consumption of dairy products.29 A 2001 Finnish study of 3,000 infants with genetically increased risk for developing diabetes showed that early introduction of cow’s milk increased susceptibility to type 1 diabetes.30


Health Concerns of Infants and Children
Milk proteins, milk sugar, fat, and saturated fat in dairy products pose health risks for children and encourage the development of obesity, diabetes, and heart disease.

The American Academy of Pediatrics recommends that infants below one year of age not be given whole cow’s milk,31 as iron deficiency is more likely on a dairy-rich diet. Cow’s milk products are very low in iron.32 If dairy products become a major part of one’s diet, iron deficiency is more likely. Colic is an additional concern with milk consumption. Up to 28 percent of infants suffer from colic during the first month of life.33 Pediatricians learned long ago that cow’s milk was often the reason. We now know that breastfeeding mothers can have colicky babies if the mothers consume cow’s milk. The cow’s antibodies can pass through the mother’s bloodstream, into her breast milk, and to the baby.34,35 Additionally, food allergies appear to be common results of cow’s milk consumption, particularly in children.36,37 Cow’s milk consumption has also been linked to chronic constipation in children. Researchers suggested that milk consumption resulted in perianal sores and severe pain on defecation, leading to constipation.38

Milk and dairy products are not necessary in the diet and can, in fact, be harmful to health. It is best to consume a healthful diet of grains, fruits, vegetables, legumes, and fortified foods including cereals and juices. These nutrient-dense foods can help you meet your calcium, potassium, riboflavin, and vitamin D requirements with ease—and without health risks.

Another Monday Morning

....but luckily, not "just another manic Monday" since I'm retired.   Ahhhh, the stressfree life.   (For those of you who aren't "there" yet, don't grumble.  Your time will come.  Allow me to bask in the freedom of retirement, because you, too, will one day.  And think of it this way:  You are ever so much younger than I!)

Actually, in a way, it will be a bit of a "manic Monday" in that I go to my health club in an hour to do my upper body workout and the treadmill, then to an aerobics class led by a volunteer in the snowbird group I joined, and after lunch, line-dancing for two hours.  But since it has been colder than normal down here, I haven't been working out on a daily basis yet.  I hope the paramedics are standing by.

Anyway, this is always the way my luck goes:  Here I am in the Panhandle instead of further south in Florida for the winter and wouldn't you know the country would be having record and near-record lows?  It's that damned Arctic air coming in.  It was actually 26 F. when I got out of bed at 6:15AM!  (Even Key West is only going to see 62 today!)  That's not what I expected when I chose to come here.

But I guess complaining is useless, as it was -9F. in Mpls. this morning and I am missing all the snow, wind chill and ice up North.  Still............

Santa and the Grandkids

Just got these photos from my daughter-in-law, and although it's a week past Christmas, thought I'd share them.

Glory Be and Hallelujah!

I miss my home church back in Illinois while I winter in Florida.  It's a great, nondenominational relevant church I found in the early 80's.  It started in a movie theater, a bunch of 20-somethings who felt a calling to establish a new church, and grew to a megachurch on a megacampus.  I was immediately drawn to it, because it was contemporary and the pastors quoted from books on psychology and relationships and personal growth that I was reading for my Masters in Counseling.  It wasn't all the "religious mumbo-jumbo" from my youth.  They made Christianity real for real people in the real world.  If you have any interest in seeing it, click here:   http://www.willowcreek.org/   And here is part of their Christmas Eve service (watch out....someone needs to teach this guy how to pan so the viewer doesn't need Dramamine!)


There is nothing that compares to it in size or format here in the Panhandle, but when I visit my son's family in Atlanta every month or so, I am treated to a similar spiritual experience at a smaller, but very Willow-like formatted church called North Point Community Church.  It isn't nearly as large as Willow Creek (although it does have several different campuses in different cities like Willow does) and I like Willow's Promiseland facilities and activities for the grandchildren better, but I have to say that although Willow does have a sense of humor, North Point's seems even better!  At the Thanksgiving service, they did a "pre-Christmas" message and started with three young men singing the Alvin and the Chipmunks song that includes the refrain, "Alvin wants a hoola-hoop"....you know the one.  Well, they sang the first verse in their normal voices, but then the second in chipmunk voices and they sounded exactly like the original recording!  We laughed so hard we cried!

I just love how happy they are every time I've been there and how they get us all to laughing and loving one another's company!


Day Two and Revelations

Ok, here's what my Vegan KickOff email suggested I cook for today:

Breakfast: Blueberry Buckwheat Pancakes and Facon Bacon
Lunch: Spinach Salad with Orange Sesame Dressing
Snack: Edamame  (what the heck is that?!)
Dinner: Whole Wheat Pasta with Marinara Sauce

And after my trip to the grocery store to get ingredients for the vegan recipes, I've come to the bottom line.  (Oh oh, have we arrived here so soon?)

I've spent hours researching soy, the benefits and dangers, fermented soy products versus nonfermented, the soy industry's claims and how much soy the Asian culture really has historically consumed.  (Not that I have ever consumed that much anyway....but I do have my Lite Chocolate Soy/Banana shake most days.  And I like marinated tofu, but haven't eaten much of it.)  Since I signed onto the Vegan KickOff initiative, I've had second thoughts.

All this talk about diet and health.  I'm sure you, like me, are tired of thinking one food is healthy one day only to read the next that it isn't.  There have been many examples of this over the few decades I've walked the earth, eggs for one example.  (At this point, it's the egg yolk with the fat and cholesterol, but the whites are considered excellent protein.)  Then there are the pesticides, the contaminents in our soil and water, the lower percentage of vitamins in foods as compared to a century ago, mercury in the fish, growth hormones in dairy, corn-fed beef versus grass-fed, carcinogens in bar-b-q'ed meats, nitrates in processed meats like bacon, salami, pepperoni,  etc.

So....I have decided to modify my vegan kickoff to follow what I, myself, think is healthy.  And that is to increase my fruits and vegetables, buying organic or locally grown whenever possible.  I love vegetables, so this won't be hard.  Fruits I've never been too fond of, but am learning to be.  And I intend to try many of the vegan and vegetarian recipes in the books I just bought, as well as those recipes offered daily by the Vegan Kickoff email communications....the ones that don't have a lot of soy or tofu....occasional soy or tofu, okay, but I'm not going to go overboard.

I already eat whole wheat, not white, bread and use whole wheat pasta.  I need to include more beans and legumes, so that will become a priority.  I love nuts, but will confine that to an ounce or so a day, just for calories' sake.  And I prefer wild rice any day to white.

I'll continue using olive oil for cooking and having occasional glasses of red wine. (Very occasional simply because I'd rather chew my calories.)

But I will continue to eat wild salmon, which I adore, water-packed light tuna (not albacore, as I've read there is more mercury contamination in it), egg whites and occasional chicken breasts or turkey.

I have cut my consumption of cheese by like 90% and drink skim milk when I drink milk at all, so I'll have to monitor my calcium in foods.  I wish I could learn to like yogurt.  The smell of it nauseates me.  Even if someone else has just eaten it and I detect it on them (so please keep your distance from me if you've just imbibed.)

I will just incorporate "moderation", focus on healthy, whole foods, and experiment with a new recipe a day from the cookbooks.  That's what I'll report here. 

(Hey, seems to me I recall a saying about a woman and her mind-changing prerogative!)

After all, if Julie Child can live until 91 consuming all that butter-rich French cooking, how can we say with certainty that we have all of the definitive answers on the food-health relationship?
